If you’re after a weeknight dinner that tastes like you went to way more effort than you did, this one’s for you.
Jayden’s been making this on repeat lately. It’s one pan, under 30 minutes, and it uses two of the Lane’s rubs we stock in store. Beef mince seasoned with Lane’s Brisket Rub, browned until the edges go properly crispy, tossed through rice and vegetables, and finished with a squeeze of Lane’s Pineapple Chipotle sauce. Sweet, smoky, a touch of heat, and the kind of flavour that convinces everyone at the table you’ve been cooking all afternoon.
The name “Man Kibble” is Lane’s own, and once you’ve eaten it you’ll understand why. It disappears off the plate faster than you can serve it.
Ingredients (serves 2 to 3)
- 1 cup uncooked rice
- 2 cups water
- 500g beef mince
- 1 tbsp beef tallow (or your oil of choice)
- 1 to 2 cups vegetables (bok choy, broccoli, capsicum, carrots, whatever’s in the fridge)
- Lane’s Brisket Rub, to taste
- Lane’s Pineapple Chipotle Sauce, to finish
Method
Cook the rice first, either in a rice cooker or on the stovetop, following the packet instructions. Once it’s done, set it aside to cool slightly. This stops it going mushy when it hits the pan later.
Heat a pan over medium-high heat and melt in the tallow. Add the mince in batches so you don’t overcrowd the pan, and season it generously with Lane’s Brisket Rub as it browns. You want deep colour and crispy edges, not grey steamed mince. This is the step that makes or breaks the dish, so give it the heat it needs.
Toss in your vegetables and cook for 3 to 5 minutes, until they’re softened but still have some bite.
Turn off the heat, add the cooked rice to the pan, and mix everything thoroughly so the rice soaks up all the seasoned beef juices.
Finish with a squeeze of Lane’s Pineapple Chipotle Sauce over the top. Start light, taste, and add more if you want it with more heat.
Everything you need is in store
Lane’s Brisket Rub and Lane’s Pineapple Chipotle Sauce are both in store at Mowerland Bathurst and Lucknow, along with the rest of the Lane’s range. Jayden swears by this combination, but once you’ve got Lane’s in the cupboard you’ll find yourself reaching for it on a lot more than mince.
Give it a go. Then come and tell Jayden what you reckon.
