The Big Green Egg has a reputation as a meat machine. Low and slow briskets, seared steaks, ribs that fall off the bone. What people may not know is it bakes as well as anything in your kitchen, and once you understand that, your world opens right up.
Introducing brownies on the Big Green Egg. Gooey, chocolatey, with a whisper of coffee running through the butter. Cooked over indirect heat until the top just sets and the middle stays exactly deliciously gooey. It's the dessert that wins over everyone at the table.
Ingredients (serves 10)
- 150g unsalted butter, plus extra for greasing the tin
- 50g whole coffee beans
- 400g dark chocolate
- 540g sugar
- 440g eggs (about 9 eggs)
- 250g plain flour
Before you start
Melt the butter on low heat and add the coffee beans. Leave them to infuse for around 30 minutes. This is the quiet step that separates a good brownie from a great one, so don't skip it.
Method
Set the Egg up with the convEGGtor and grid for indirect cooking at 170°C. Grease a round cast iron skillet (around 27cm) with butter.
Reheat your coffee-infused butter, sieve out the beans, and top it back up to 150g if it's dropped. Break the dark chocolate into pieces and melt it into the warm butter. In a separate bowl, whisk the sugar and eggs until they're pale and fluffy. Sieve the flour twice so there are no lumps.
Fold the chocolate mixture into the eggs, then gradually fold in the flour until you've got a smooth batter. Pour it into the greased skillet and spread it evenly.
Sit a baking stone on the grid, put the skillet on the stone, and close the lid. Bake for around 30 minutes. You're after a golden-brown top that feels firm to the touch but not hard. Let it cool in the skillet before slicing.
